Oatmeal, Eggplant Parm, Shrimp & Rice

Breakfast, Lunch, and Dinner. Yes,, it as one of those rare days when I ate three meals. Two packets of instant oatmeal for breakfast at my desk. An eggplant parm pannini with a Mountain Dew from Chianti's for late lunch at the Toyota dealer while waiting for my car (30,000 mile tune up), a bottle of Suja probiotic waters (cuz relapse happened), and then shrimp and rice with onions for dinner here from freezer to microwave (three separate bags, so it took a separate cooking and a little mixing to get the mixture done just right and just right it way). All in all, a delicious balance food day. How are you eating? :)
